Recipe for buckwheat:

Despite the name, buckwheat is not related to wheat and is often sought as a gluten-free alternative to wheat. While buckwheat is technically a seed, its high carbohydrate nutrient profile makes it more like a grain in the culinary sense. High in iron, manganese, magnesium, phosphorus, copper, and zinc, buckwheat is a healthy addition to any soup, or great as a side. Buckwheat can also be cooked in a shallow sauce pan to have a firmer texture, please refer to this article for more information.
Total Cooking Time: 25 Minutes

Step 1:
Get a cup of buckwheat and rinse it 2-3 times, draining the water quickly to preserve texture. If the buckwheat has been roasted (kasha) you are good to go, otherwise consider roasting/toasting the buckwheat in a shallow sauce pan to firm its texture and enchance its flavor.

Step 2:
Place the buckwheat in a pot, add 2 cups of water, set to medium high heat, and add a lid. Alternate: Bring 2 cups of water to a boil, then add the buckwheat, put on the lid, and turn the heat down. After 15 minutes remove from heat and let sit for another 10 minutes. This will make the buckwheat firmer with a more crunchy texture.

Step 3:
After 15-20 minutes all the water should be absorbed and the buckwheat will be cooked. Alternate: Slowly cook the buckwheat in a shallow sauce pan. This will cause the buckwheat to absorb less liquid and firm its texture.

Step 4:
You are now done, and have cooked buckwheat, a hearty grain that is great on cold days. It pairs well with dark leafy greens as well as beans and legumes.

Adding variety to your diet can often introduce nutrients that may complement those present in the foods that you already eat. Although the sorghum grain, or Sorghum bicolor, ranks fifth behind wheat, rice, corn and barley in world production and consumption, it is a staple food in 30 countries in the tropics and semi-tropics. In contrast to many other cereal grains, sorghum is gluten-free, and the bran layers of dark-colored varieties are rich in phytonutrients with health-promoting properties.

Nutrients in Sorghum:
Sorghum may be cooked and served alone, popped, or used in porridges and breads. A 1-cup, 192-gram serving of sorghum is energy-rich, providing 650 calories, 48 percent of your recommended daily intake, or RDI, for carbohydrates, mainly complex carbohydrates, and 48 percent of your RDI for fiber. Sorghum is rich in thiamin, riboflavin, niacin and trace minerals such as iron, phosphorus and potassium. The color of sorghum varies from white to red to black, and the bran of dark-colored varieties is rich in compounds called phenolic acids, tannins, anthocyanins and policosanols.

Sorghum Antioxidants and Cancer:
The bran layers of pigmented sorghum varieties contain antioxidants that may help protect against cancer development. Mortality from esophageal cancer in Shanxi Province, China, is lower in people who consume sorghum and millet flour than those who eat corn and wheat flour, according to an ecological study appearing in the April 1993 issue of the “International Journal of Cancer." An epidemic of squamous carcinoma of the esophagus possibly caused by fungi in South Africa might be due to a shift in consumption from sorghum to corn as a dietary staple, according to a review in a 2005 issue of “Medical Hypotheses.”

Sorghum and Carbohydrates:
Sorghum may slow and reduce carbohydrate digestion and absorption, which could help with blood glucose control in people with diabetes. Adding tannin-rich bran extracts of dark sorghum to corn and sorghum flour porridges lowers the estimated glycemic index of the porridges in simulated testing. Sorghum tannins interact with carbohydrates and cause the formation of resistant starch, which lowers starch digestibility. Sorghum extracts inhibit amylase, the enzyme produced with saliva and pancreatic juice that breaks down starch.

Sorghum is Gluten-Free:
If you cannot tolerate gluten or have frequent allergic reactions after eating foods made with wheat, oats, barley or rye, sorghum is a gluten-free alternative staple grain. Sorghum appears to be safe for patients with celiac disease, an autoimmune condition of the small intestine that is aggravated by gluten, as reported in the Dec. 2007 issue of “Clinical Nutrition." If you do substitute sorghum for other foods in your diet, do not rely too heavily on sorghum’s protein for contribution to your daily needs. Sorghum protein is poorly digested after cooking and is deficient in the essential amino acid lysine.

1 tablespoon olive oil
2 onions, coarsely chopped
2 carrots, coarsely chopped
2 celery stalks, chopped 
1 3⁄4 cups reduced-salt chicken stock
1 large can (796 ml) no-salt-added crushed tomatoes
1⁄2 cup chopped fresh basil
2 tablespoons chopped fresh oregano or 1 teaspoon dried oregano
1 can (540 ml) red kidney beans
1 can (540 ml) pinto beans
1 can (540 ml) chickpeas
1⁄2 cup freshly grated Parmesan cheese

1.Heat the oil in a large nonstick saucepan over medium-high heat. Sauté the onions, carrots and celery until soft, about 5 minutes. Add the chicken stock, tomatoes in purée, basil and oregano. Bring to a boil. Reduce the heat to medium-low, partially cover, and cook for 10 minutes.

2.Place the kidney and pinto beans and the chickpeas in a colander; rinse and drain. Stir them into the soup. Cook until the flavours develop, about 10 minutes. Remove from the heat.

3.Very coarsely purée about a quarter of the soup using a hand-held blender. Or transfer about 2 cups soup to a blender or food processor, very coarsely purée, and return to the pan. Serve 2 cups Tuscan mixed bean soup per person topped with 1 tablespoon of the freshly grated Parmesan cheese.

Remember, canned beans have salt added, so be sure to rinse them several times before adding them to the saucepan.
