Naturally brewed with koji mixing and moromi fermentation with Organic Raw Soy Bean as main ingredient.
Koji Mixing: A fermentation process that involves the mixture of Organic Soy Beans, Organic Wheat Flour and Organic Koji Powder (Organic Cultures) - The term "Koji" is from Japan and used both for the mixture of soybeans, wheat, and cultures; as well as for only the cultures.
Moromi Fermentation: A process usually carried out in closed tanks that are kept under the sun for less than 6 months, a crucial process for a good soy sauce.
Nutritional Benefits :
No artificial fermentation with genetically engineered enzymes and soy beans that are defatted with hexane, a petroleum derivative that might have negative impact for human health
