Soy sauce, also called tamari, was originally developed from miso, a fermented paste of soy beans. Although soy sauce is high in sodium, its rich flavor provides ample seasoning with the use of a small amount. The World's Healthiest Foods notes that by bypassing the salt shaker entirely and using a small splash of soy sauce, you may actually ingest less sodium. Soy sauce, rich in vitamins and minerals, is a healthy seasoning choice with many benefits. If your doctor has advised limiting salt intake, try a low-sodium variety.
Supports Heart Health

Niacin, found in soy sauce, can promote heart health by helping to lower levels of triglycerides--or fats in the bloodstream--while raising the levels of HDL, or healthy cholesterol. In a clinical study conducted by MB Elam and published in the September 13, 2000 issue of "The Journal of the American Medical Association," researchers found that niacin significantly lowered triglyceride levels while raising HDL. Considering its low caloric costs--1 tbsp. contains a scant 10 calories--soy sauce delivers high amounts of niacin. The World's Healthiest Foods notes that 1 tbsp. of soy sauce delivers 0.72 mg of niacin, or 3.6 percent of the recommended daily value. In addition to its beneficial effects on triglycerides and HDL, niacin --also known as vitamin B-3-- is described by The American Cancer Society as being essential for the general health of the skin, nerves and digestive system.


Antioxidant Properties:
A trace mineral found in soy sauce has antioxidant effects. One tbsp. provides 0.09 mg of manganese, or 4.5 percent of the DV. According to University of Maryland Medical Center, manganese helps in the formation of connective tissue and in clotting of blood. It is also a constituent of superoxide dismutase, a potent antioxidant enzyme, which fights the free radicals that can damage cell membranes and DNA.

Helps Stabilize Moods:
Tryptophan, an essential amino acid that must be procured through diet, is delivered in generous amounts by soy sauce. The World's Healthiest Foods notes that 1 tbsp. contains 0.03 g, or 9.4 percent of the daily recommended value. Medline Plus notes that your body uses tryptophan to produce serotonin--believed to promote healthy sleep and stable moods--and also to make niacin. There is some scientific research supporting the belief that tryptophan can improve mood. In a placebo-controlled clinical study conducted by S. Steinberg and colleagues and published in the February 1999 issue of "Biological Psychiatry," researchers found that tryptophan increased serotonin synthesis and reduced mood swings, irritability and negative moods in women with premenstrual dysphoric disorder.
